If you are really in a hurry, you can microwave the vegetables in a a covered dish. If you like hot and spicy food use the chipotle chile variation instead of the smoked paprika. Persimmon & Pomegranate Salad
Some years our two persimmon trees produce bushels of fruit and we search for creative ways to use it all. This salad uses the flat Fuyu type persimmons when they are still firm and was a beautiful addition to our Thanksgiving dinner. Try to find a large pomegranate that is firm but not dried out. How to Make Sriracha Sauce
The peppers at our Farmers’ Market are bountiful and beautiful this time of year. It’s fun to make your own sriracha sauce using the peppers of your choice. I have used Tobago peppers, long red cayenne, red jalapeños, and a mixture of multiple kinds of peppers. Although fermented, the sriracha is cooked to stop the fermentation and preserve it so it does not contain active probiotics. It seems to keep indefinitely in the refrigerator.

4th of July Coconut Blancmange
We usually eat fruit or a square of dark chocolate as a treat, however, a “not too sweet” dessert is welcome on special occasions. This blancmange is super easy and could be made on the road if space is available in a cooler or refrigerator. If possible, use all organic ingredients. Serves 6.
