Easy mixed vegetables with sesame tahini sauce

Sesame Sauce For Mixed Vegetables

This easy sauce turns simple mixed vegetables into something special. Start by sauteing mixed vegetables in a small amount of olive oil. If you are really in a hurry, you can microwave the vegetables in a a covered dish. If you like hot and spicy food use the chipotle chile variation instead of the smoked paprika.

Ingredients:

  • 3 Tablespoons extra virgin olive oil
  • 3 Tablespoons lime juice
  • 3 Tablespoons tahini
  • 1 1/2 Tablespoons honey
  • 1/4 Teaspoon smoked paprika
  • Substitute up to 1/2 Teaspoon chipotle chile flakes instead of  paprika for a hot and spicy sauce
  • fresh ground pepper to taste
  • fresh ground salt to taste

Directions:

  • Mix all ingredients
  • Pour over pre-cooked mixed vegetables and toss

Mixed Vegetables:

Thinly slice a variety of vegetables. In the photo i used:

  • 1 eggplant
  • 1 zucchini
  • 1 yellow summer squash
  • 1 sweet red pepper
  • 1 parsnip
  • 1/2 medium onion
