This easy sauce turns simple mixed vegetables into something special. Start by sauteing mixed vegetables in a small amount of olive oil. If you are really in a hurry, you can microwave the vegetables in a a covered dish. If you like hot and spicy food use the chipotle chile variation instead of the smoked paprika.
Ingredients:
- 3 Tablespoons extra virgin olive oil
- 3 Tablespoons lime juice
- 3 Tablespoons tahini
- 1 1/2 Tablespoons honey
- 1/4 Teaspoon smoked paprika
- Substitute up to 1/2 Teaspoon chipotle chile flakes instead of paprika for a hot and spicy sauce
- fresh ground pepper to taste
- fresh ground salt to taste
Directions:
- Mix all ingredients
- Pour over pre-cooked mixed vegetables and toss
Mixed Vegetables:
Thinly slice a variety of vegetables. In the photo i used:
- 1 eggplant
- 1 zucchini
- 1 yellow summer squash
- 1 sweet red pepper
- 1 parsnip
- 1/2 medium onion
